I usually leave the skin/scales on with redfish, along with the ribcage, cause I normally either grill or broil my redfish, and just pick the meat off the bones after it's cooked :lick: . I did one of the do-it-yourself kits to a truck I had in high school. It actually turned out looking pretty nice and still looked good when I sold the truck. It was one of the cheaper brands, but I forget the name of it.
