But I did decide it was time to clear last years ducks out of the freezer.
I took some diver breasts to Stars Meat market and had some sausage made... 40% Pork 60% duck.



The flavor was great- even my wife liked it.
I prefer the "wild" flavor so I may have the % of duck kicked up - maybe 30 % Pork 70% duck.
They will also make link and smoke it... Going to try that when this batch is gone.
