I've never really like smoked duck, but the secret is to dry age it for 4 days or so before you smoke. That will tenderize it.

After you smoke for a bit (not all the way done) bone it out, cut it up (you can leave the legs whole) and add it to a sausage gumbo (dark roux, pepprs, onions, celery. good spicy sausage, shrimp stock, plenty of black pepper) simmer until it gets real tender!!! Yum!
Cheer up, it gets worse...I did, and it did!!
