Pear salsa

Our pear tree has really been loaded this year. Gave away multiple bags to neighbors and I've been eating several a day. Wanted to try something new, so found this recipe on-line. Mixed up a batch today and it's delicious. I'm going to try topping some grilled fish with it.

juice of two fresh limes, quartered and squeezed
1/2 cup of olive oil
fresh ground black pepper
kosher salt
pinch of sugar
Whisk together in a smaller bowl and set aside.

Chop bunch of fresh cilantro and mint and put into large mixing bowl. Chop up a medium red onion and add to the bowl. Chop up several pears (slightly green for better firmness and more acidity). I cut all these ingredients fairly small.

Split and de-seed one cerrano chili pepper. Dice finely and add to mix.

Pour the juice/oil mixture over the batch and stir to coat. Add a little more kosher sea salt to taste.

I ate half the mixing bowl after finishing the batch. Definitely a keeper for me.

I can dig it. I have a few pear trees in the yard and are always more than anyone wants..
