I think you're describing the same pair of sinks, just approached from the north instead of the east side like most folks come in from. I have a Google Earth map somewhere of a few hundred springs I've cataloged in the panhandle with my notes from freediving each of them. I'll see if I can dig it up.

Sail cat is the best tasting saltwater catfish. Sea urchin and cucumber are straight up delicacies! It's like you're not even trying!

I've had them in Carribbean style stews a couple of times. The spicy kind that uses all sorts of bony fish and heads.

Just as good as any other fish meat in that context, but it's all overcooked and infused with tomatoes and spices at that point.

If you fish some of the large public fishing piers west of here in the panhandle, you'll find families of SE Asian fisherman all year long who will walk the pier taking ladyfish off people's hands before they can throw them back.

Wife is going to be getting surgery and will be off her feet for a couple of months, so I think I'm going to pull some parts off the boat and start making some upgrades while she's out of commission. Anyone looking for a +1 on any offshore trips between now and May or so? I'm tired of trout and reds...
