Tried a new redfish recipe

I love them blackened and like them a lot fried. Used a flounder favorite and the redfish beats the flounder (which I love too).

Take redfish filets and lightly coat both sides in blackening seasoning.

5 ounce bag of Croutons (plain or butter/garlic)
Small can of crab meat
Small bunch of green onions
Butter

Cut tops of green onions from a whole bunch (to taste)
Crush croutons and then mix in crab meat. Pour in melted butter(about 1/4 of stick) and onions. Mix well.

Take the redfish filet and place the stuffing on top. Roll the filet over itself and use 2 toothpicks to hold the tail to the front
Stuff with more of the the crab cake mix, until it is as full inside as you can get it.
Brush the redfish and crab cake with melted butter.
Bake at 400 for about 20-25 minutes (until the crab cake is golden brown).
Remove the toothpicks and serve.
Ducks, turkeys, flats fishing. Who has time for golf?
