Favorite Fish to Eat

With all this uncertainty going on, and maybe a lot of us not able to proceed with our normal programming of fishing. Thought I’d ask... what’s your current favorite fish to eat and cooked which way?

My favorite fish is a good ol’ roe mullet during the run deep fried or smoked with some cane syrup. I may be a bit picky, but I will wait all year until they get right before I mess with ‘em.

Same, sans the cane syrup. Not quite as picky either on when I eat them.

Right now, Spanish Mackeral, raw.
Nigiri, sashimi or a roll.
It's all delicious.

So many ways to eat fish. How can anyone possibly have a favorite. I’m the only one left at my house that eats them, so trying something new every week is my goal.

Blacken redfish is amazing served with pasta. Whether you go the olive oil route or red sauce.

Hard to beat stuffed flounder.

Fry em, bake em, blackened, grilled, it don’t matter. I luv em.

But probably my absolute favorite has nothing to do with taste. Fried bluegill. Crunching tails with family. We would pile them so high on the table that the kids couldn’t see over the top. I still go fishing freshwater every once in a while just to remember. I suspect most people’s favorite is the same. Remembering the folks we shared them with. Is my favorite.

They aint bad cold fried with a big slice of onion!!

Standard: Redfish, blackening seasoning, butter in a blazing hot cast iron skillet.

Also I'll take sea salt & peppered Spanish with garlic & thyme sauteed in butter.

Also anything deep fried, because, the South!

Broiled flounder. Redfish on the halfshell. Any fresh filet soaked in Louisiana hot sauce, rolled in seasoned corn meal, and fried in peanut oil. Hard to guess how many bluegill the current three generations of my family have eaten that way.

Yessir. All these favorites sound delicious. Here is a recipe a customer shared with me when I worked at the fish market. She swore this was the gospel of blackened red fish recipes. Had me at blackened fish....
