Need easy fish recipe for camp stove...

Just wandering what kind of easy, yet tasty recipes some of you might have for cooking fish on a portable camp stove. Going fishing and camping this weekend, and would like something simple.

Blackened.


hot cast iron skillet,melted butter, fresh fish sprinkled with Zatarain's blackened seasoning.


melt butter in skillet
sprinkle fresh filets with liberally with blackened seasoning
pan fry a couple of minutes each side

I know this may sound too simple, but cooking fillets in a cast iron skillet works great. Just put enough oil in the bottom to keep them from sticking, season the fish to your liking, and put them on the skillet. Get the skillet hot (not smoking...hot) before you add them. This will make the meat hold better together because you may get a little "browning action or crust" with a hot skillet right off the bat. If the skillet is cold, the fillets may just fall apart after a little cooking. Be sure to turn them over before too long. You need a fat spatula to help turn the fillets. After one or two fillets you will get the hang of it. You could season with just salt and pepper and butter, but anything you'd like would be good. Don't leasve out the salt. If the fillet is fresh, it holds together well and will smell delicious.

If you wanted to get fancy, crush up some salted crackers (real, real fine) and roll them in this before you cook them. If the cracker particles are too big, they just get in the way (ie- it screws things up). Putting the crushed crackers in a zip lock bag, and just put the fillets in the bag before you cook them. I've watched a friend to this to brook trout, and it was wonderful...but he had done this a lot times.

What he said is correct. But, you can buy cracker meal. It works way better than corn meal anf flour.

My wife is a fantastic cook- at home or camping...
One of my favorite recipes demands a story-

A group of young married couples planned a weekend camping trip in the mountains. Each wife had dinner planned for one night.
The first night- Hot Dogs on a stick
The second night- chilli
The third night its my wife's turn.

We get Mountain Trout Steamed with white wine and vegetables.
One of the husbands looked at his wife and said-
Honey, you don't cook that good at home.
I would not have wanted to be in their tent that night!

She Takes a fillet of fish and centers it on a sheet of foil.
Put any seasonings you want on it
Turn up a couple of the sides and pour in some liquid.
Water, Lemon juice or wine.
You can also add some vegetables if you like- green beans work well.

Seal up the foil and throw it on the coals or on the grill.
It will poach / steam the fish and it will come out moist and tender.

It was a little better than your version JT.
If I remember your recipe it was:
Vienna sausages, Mad Dog and a splash of coke for color in foil....

Gentlemen - thanks for the suggestions. They all sound like some good eatin' - I will definitely try at least one - maybe two - of them out this weekend.
