For me... the absolutely best eat'n fish .... was the last one :-D :thumbup:

Make sure you take all red meat (bloodline) out and cook it just like any other fish you like. My choice is fried.

Mullet 1st, then everything else. :beer:

I've never tried saltwater catfish, though.

My favorites:

1. pompano
2. sea bass
3. cobia
4. flounder
5. trout (specks and sand)
6. red
7. whiting
8. spanish
9. sail fin cat (they really are good)

croaker are excellant as well but I have never caught one in the Big Bend area.

I actually picked up two a couple of weekends ago off AGP. Small, but they were definitely there.

My favs:

- Flounder
- Cobia
- Trout
- Red
- Spanish

I vote for Redfish, but there's not too many that aren't good with the right recipe. I mean, I bet I could blacken a dog turd and make it taste good. :lol:

If you're going to grill trout and other softer fish, I'd encourage you to buy a grill basket. Otherwise the fish can fall apart.
