Almond Orange Grilled Amberjack

Grill amberjack brushed with butter (or olive oil, or Italian salad dressing) on high heat.

Mix following ingredients for orange butter sauce in pan on low heat:

quarter-pound butter
quarter-cup orange juice concentrate
quarter-cup white wine (or orange juice)
two or 3 dozen raisins (yellow ones if you can find them)
dash of soy sauce

Pour orange butter sauce over the grilled Amberjack and sprinkle sliced Almonds on top.

Enjoy.

harmsway that almod orange AJ sounds delish! :lick: aren't aj a little oily? i'd heard that they are.
