Something different for trout

4 trout filets (2 fish)
Land of Lake Roasted Garlic Butter (great taste)
Sicilian Blend spice (publix bread dept has it in the 4 spice canister)
Lemon juice (or lime)
14 oz can diced tomatoes
1/2 cup raw rice cooked (I use Uncle Bens - not instant - but a white & wild rice mix would be good too)

Put 2 tablespoons garlic butter in skillet - heat - season one side of trout with Sicilian Blend - lay that side down in skillet - season the top side - spread diced tomatoes (and juice) around & in between filets. Squeeze juice of one lemon or about a tablespoon of lemon or lime juice over it. Add a little black pepper. Cover & cook about 6 minutes on medium. Remove fish and stir cooked rice into tomatoes - break fish up slightly (it should fall apart on its own by now) and gently mix back in with rice. Heat for about 2 more mintues.
