I'll guess you're looking for fly patterns. The examples you asked for cover inverts and vertabrates, which is vast. I could llikely help if your question was more specific, like what does x look like at a certain time.

Peterson Field Guides series, Atlantic Coast Fishes

Sport Fish of Florida/GOM by Vic Dunaway

All three have detailed illustrations of baitfish (although many of the Peterson plates are B&W).

Don't know of any reference book offhand that focuses on crustaceans, tho. You might check at Bill's in Tally under some of the textbook sections for marine biology.
