Its a mushy meat. Some people make patties out of them, Just like you would make salmon patties.

Bowfin aka mudfish
Guy that used to run the little store on Iammonia used to trade us camping spot and store credit when we'd bring them in for him to resell.
Truly a prehistoric fish. They have an attitude for sure!

Also heard them called a shoe-pick. Heard they are full of bones. Ones I've caught get hit in the head before they come in the boat. They are a big problem on game fish.

Here is my old family secret recipe:
Place your cypress trout on a 1X8 blank of appropriate length.
Strip the skin offa dat sucka.
Gash it on both sides every 2 inches or so.
Salt & Peppa to taste.
Bake on plank in oven at 350 degrees for 1 hour.
Pull fish and plank oudda dat oven.
Gently scrape da fish into da trash heap.
Cut up and enjoy da plank!
