This might not be any help as my experience comes from rivers but for what its worth. I fish from a 15' solo whitewater canoe with a 28'' beam ,about the same as a rec. kayak. Don't hook many of what you would call large fish but the occasional musky or catfish is pretty big. The catfish always want to run under the boat and the only way to do anything about is to turn with them, easy in a rockered boat and do-able in a rec kayak. If they run under in front of you just lean back and a large fish will turn the boat on its own. You can also help the process along by moving your waist to turn the boat. Should be a lot easier in open water than a river. Also this is more stable than what it sounds but I've only had to deal with 30# fish.
