Wevans is right- they are a mess to clean but they are good.
Be sure to cut out all the dark meat along the lateral line.

Agree with CT, I have caught both sailcats and hardheads on skitterwalks. Didn't know anyone else had that kind of luck. Good to know it happens to others also. I think Florida sportsman had an article last year praising sailcat meat and that they were sold commercially in Texas.
