Thanks Bman for the video, it was a great help. And the grapefruit spoon is KEY! I was able to almost keep up w/ 2 people opening, while I got the guts out and scooped out meat w/ the grapefruit spoon.

I always use a small (one gallon) shop vac to clean scallops. As I harvest I immediately put them on ice. Once I have my limit, I leave on ice for an hour or two, this allows the scallops to open and they do not have to be forced open. I then scrape the muscle loose from one side of a shell with a silver spoon. Then I open it and suck the guts off the muscle with my shop vac. The muscle remains attached to the other side of its shell without being pulled off by suction. I then scrape the muscle into a container. I usually have my kids with me so I set up an assembly line and it makes for quick and easy cleaning. I immediately clean out the shop vac and wash it thoroughly!
