The last one I cooked the other day was a sharpnose, the first I have ever eaten and I think you are right. It was not as good as the blacktip. I have eaten bonnethead, but it was years ago. The last couple I have been involved in catching were eaten by someone else. Maybe they thought I was crazy for liking shark?

Whew! Looks like something you'd need a washdown pump on your boat for! What a mess!
The shark in the video appeared to be pretty dead already. Question. Would you do this after bleeding the shark, or in lieu of?

Grill shark like steak, hot fire and lemon/butter to baste. Blacktip/atlantic sharpnose (white spots on body) are both good, but bonnethead not so good. The reason being a mature bonnethead is only about 4' long. Absolute imperative kill and bleed ASAP Used to cut off head to bleed, but with new regs not sure if this is legal? I gut and put on ice.
