Why are they white? And what makes them better for saltwater use?

They're white because that is what color the manufacturers make them. They have a different finish than freshwater motors to make them more corrosion resistant. They also use stainless hardware. Don't know about Motorguide, but MinnKota also has a zinc prop nut on their saltwater models.

White to blend in with the corrosion

Most saltwater ones have a sacraficial anodes, to cut down on corrosion, I don't believe the freshwater ones have the same size anodes (smaller)

I always figured that they made em White so that folks could easily tell that ya spent twice as much money on it as they did fer the Black one :o another dif. in the salt and fresh is the coating that they use on the electrical circuits :-D

Black is beautiful and white is right! :-D

Although I was once told by a fella to spray the motor (black) with polyurethane and it would last as good as a white one.....?

I figure I won't go enuff to justify the white expenditure.. 8)

I've been running the same foot controled fresh water TM on my boat for four years :-D replaced the switches in the foot control and cleaned and painted the motor once in that time

All I have ever used was freshwater ones, until the Riptide I have...The white one looks almost as good as new after a dozed or so trips...The freshwater ones would show their weakness over time

I have beat the crap out of my Riptide over the last 4 years. Just ask anyone that has fished with me. It has held up great. Had to replace 4 props though.
