Stuffed Grouper

Stuffing: Mix a can of drained crab meat( you can use lump crab in the can but it is more $) with some mayo and Parmesan until it has an almost creamy texture. Finely chop some onions, garlic and green onions and sauté in butter until the onions are no longer crunchy. Add to the crab meat mixture then salt and pepper to taste.

Wash and dry the fillet- cut into serving size portions. Butterfly each fillet and spread the stuffing inside closing the fillet around. If the fillet's aren't thick enough to butterfly, you can spread the stuffing on the pan and then lay fillet on top. I season the top's of the fillets with a little Old Bay and some kosher salt. Put in oven on 400 until it flakes easily.

There are many variations- you can 'kick it up a notch' as Emerald would say with some cayenne and hot sauce or of course you can wrap it in bacon for GIT-R and BD.

This stuffing also makes incredible stuffed mushrooms- add a little shredded Romano to the top and :lick:
