Best in-shore eatin' fish?

I've been fishing the flats for about 5 years now and have always been a catch and release guy. This year I'm thinking about keeping one or two fish and trying them out on the grill.
SO......what's the best in-shore eatin' fish? Specks good? Red? Spanish? Flounder? :lick:

Trout= :thumbup:

RedFish on the half shell= :thumbup:

Flounder= :thumbup:

Mackerel= :thumbup:

And my favorite when they come Cobia, :thumbup: :thumbup:

bman.....there in nothing...absolutely nothing wrong with the tasty "sailcat" you pictured. It's one of the best tasting fish on the flats. In fact I brought home 3 yesterday that toped out at about 4 lbs.
My vote for the best tasting fish down there is the "flounder" As Tony the Tiger says "it's great" :-?

Take trout out of the list and I fall right in with you. Only one I would add is black bass, they can be pretty tasty.

:smt006 Tripletail...broiled (lemon/butter basted) served up with a chutney relish on the side, some spiny fries, & a small mixed salad - drizzle on some Raspberry/vinaigrette; maybe some toasted walnuts in the salad dressing,eh! :lick: :lick: :thumbup:
