You shouldn't need the quick release, but it does make it nice if you want to remove the bowmount and trolling motor.

The frame of the motor fits over the mount and all you do is slide a U shaped pin through the TM frame and the mount and your done. When you want to remove the motor, pull the pin and lift up the motor. All that is left on the boat is the mount. You can take the motor off in a matter of seconds. I like it also because if I'm doing something other than fishing I don't have to have the TM on the boat. plus when I travel I can take the motor off and put inside. This gives the theifs less to steal.

The mount I have comes from MinnKota. It includes the piece that mounts to the boat and the frame that mounts to the motor plus all the screws you'll need. I'll send you a PM

Mike's Marine, in Panacea, usually has them in stock. Or you can order one from Bass Pro, or probably several other places.
