Last time I was down that way I caught a ton of small sharks from the surf at Alligator Point. I let all of them go but was wondering what are the better eating sharks and what size would be considered prime. The seafood places up here sell blacktip steaks and I seem to like them just fine. Does bleeding them help the flavor?

I find most sharks under 3 feet, good eating, the trick is to gut and skin
quickly, they release urine through their skins.
They also are the only fish you can clean at sea. but I'd keep something to prove the fillets came from a shark.
