James and I headed down the river at 8am. We fished creeks 1st for Reds with shrimp and jigs, nada. Went out to 4-5' and had a slow drift back in. Caught 15 trout on gulp new penny, and various other jigs. Landed several Spanish macs, and blues. At 3pm we headed back to creeks for Reds, and nada again, but a nice flounder

. Just a great day on the gulf, great weather and light wind. Came in by 5pm. Total keepers, 5 trout, 2 blues, 2 Spanish, 1 flounder. How do you guys fillet flounder, I seemed to make a mess of it?

I just caught their head off like you're cleaning a bream and gut 'em, scale 'em and broil them whole with lemon juice and seasonings. That meat is too good to waste. Were you fishing east of the bird rack late morning early afternoon yesterday, I was drifting kinda parallel to a boat for a couple hours?

If you google How to fillet a flounder..... you'll see several methods.
Here's a link to a slide show that shows some of the basics.

I don't cut off the head, fins, and tail as shown (just extra work imo) but other than that its close to what I do with them. You end up with 4 fillets per fish instead of two. There are some methods where you end up with 2 per flounder if you prefer that method.
