My wife got this Recipe off The Food Network...
We did it with Redfish- the only switch up was we grilled the redfish skinless on foil... It kept it moist.
Marinated in onion, lime juice, orange juice garlic and cilantro.
(I grilled the marinade and it will be good on rice or more fish!
Salsa is mango and avocado.
The toasted coconut added a ton of flavor...
I guess this is why I have to go to the gym...

Bman, this is the second time you have posted something that looks great! If you wife is cooking this one again tonight we will leave Albany about 4pm so we will be in Tallahassee about 5:30, I am looking forward to it! We will bring dessert.
