1st Post... need advice on Carrabelle area fishing, crabbing

Hello all, I got the link to his site off the Kayakfishingstuff.com forum. My wife and I will be vacationing at Carrabelle Palms RV Park July 1st through July 7th. It's located right in from the west tip of Dog Island. We will be bringing our OK Malibu Two and I would love to get into some good fishing.
Paddling: How is the water between the beach and Dog Island? Depending on the current, we were thinking of making a day trip out, fish, eat lunch, fish, come back. What's the shark scene like? This is our first time paddling in the brine. Any advice would be wonderful. (don't worry, we will have and wear good PFD's)
Fishing: All of my experience is with freshwater fishing, so any pointers on tackle I will need (ie: everyone says that oyster beds are hell on line, should we plan for steel or heavy weight leaders?) would be wonderful. People on the KFS forum said light to medium r&r's and popping corks and shrimp for trout. What about surf fishing? Heavy r&r's? Bait? Of course we also plan to put out some Crab nets also, any advice?
Sorry for such a long first post, but I can't stand no being prepared. So pretty much, give me any advice you can on any kind of fishing we can do from the beach or yak. Gracias!
