Ok guys....I got'um cleaned per your helpful instructions, do they look like I did them right ?

Now....what would you suggest I do with them....obviously my fist time cooking these, looking forward to it.

Fried, baked Broiled... any way you would do a Grouper.

That looks perfect. Score them on each side and either fry them whole, or marinate in some Italian dressing and put them on the grill.

Or use any veal recipe and substitute the trigger fish. Those are some great looking fillets!
