Going fishing out of Carrabelle- Any advice

My granddad and an uncle are coming down on Friday to do some fishing with me. I've already booked beds at the Moorings at Carrabelle and I also have a slip to put the boat in. None of us have been fishing around there so all I have is what people have said online here and my charts. My plan is to fish in the morning on the shallows just east of the river mouth and then start trolling deeper water and cuts around Dog Island Reef when it starts getting hot. Any advice - secret spots, bait ideas, etc. 8) ? I've noticed a couple of wrecks on my charts in that area too, anyone have any luck on them? This is pretty much an adventure for us and I want my granddad to have a good time since he probably won't be able to really fish hard to much longer due to his health/age. He wants troll a lot due to not be able to cast for hours on end anymore. Any info would be greatly appreciated.

Tell us what your in. It makes a difference as to where someone would advise you to fish.

I'm running a 19 foot wellcraft center console. It has a V hull. I've used it to drift the flats at St. Marks so as long as I have 2 feet of water I'm good. I've used it trout and redfish fishing before and as long as I'm careful setting up the drift I've never had any problems. I've also used it trolling and had a lot of success their too.
