From all the stuff I have read, the 3rd outboard when 3 are running only adds 5-10% of the speed and power of a boat with 3. However, if you were to lose one of the 3 engines, 2 should be able to get it on plane and run.

I think you meant "a boat with 2". That is not true, at all. Whatever you are reading needs to be disregarded.

What is the advantage over twins besides compinsation of "other" things?

An example...

A 33T Contender with Yamahas (in the real world) runs 70 with trip 300s, low-mid 60s w/ trip 250s, mid 50s with twin 350s, & upper 40s with twin 250s. The trip 250s get better fuel milage than the twin 350s. I don't know the fuel difference between twin & trip 250s.

As a genral rule of thumb the bigger the boat, the better the ride. Bigger boats need more power to move. The faster the boat, the more time to fish.

5% would be trips doing 50, twins doing 47.5
10% would be trips doing 50, twins doing 45
... that is not even close

None of the 36'+ boats would move without at least trips. My duckboat is faster than a 36 Contender with twin 225s.
