Does anyone have advise on the best way to cook Cobia?

Absolutely!.... Glad you ask.
The best way to cook Cobia is at my house!
fried, broiled, baked, grilled, It's all good!! The meat is firmer than trout, more on the order of redfish (only better imo)

salt/pepper. seared in a hot greased frying pan, finish off on hot wood coal grill. top with garlic/butter, capers and a lump crab

I can demonstrate if necessary!!

I always just cut into fingers, breaded and fried
