I have seen people wade fishing in St Joe Bay and between Carrabelle and Eastpoint.
The causeway section of the bridge on to St George Island, is very productive.
Hopefully, someone with a bit more local knowledge will chip in.

My standard answer is kayak. You're seriously limited from shore around here. I'll try & suggest more later but for now I'd have to suggest Bald Point & the oil docks in St. Joe. The oil docks are often really great fishing.

Hickory Mound is good fishing & crabbing from the bank. Kids love the crabbing.

At the base of the bridge over Ochlocknee Bay is pretty good at times. The public fishing pier at Mashes Sands is fair. Wakulla Beach if your wading is good. You can fish from shore at the Old Fort in St. Marks. You can rent a small boat or kayak in New Port and float the St. Marks, or fish at Hwy 98 bridge in New Port for big stripers. You can fish in the cut at the St. Marks lighthouse. Lots of places to fish at Hickory Mound off Hwy.98. At Keaton Beach there is a public fishing pier, and a number of places to reach the Gulf from shore. Further around the coast there is an outstanding place to bank fish called Hagans Cove.
Many other places in between these I named. Just need to explore.
