Goose Jerky!

Decided to try some jerky with the geese we shot last weekend.
Started with two pounds of goose breast. Used a store bought cure for my first batch.
Froze it and then sliced thin...Marinated it overnight.

We don't have a dehydrator so I used the oven. Set it at 200 and propped the door open with a wooden spoon

Took a few hours for it to dry out.. worked but made me want a dehydrator.

Turned out great and the flavor is good... Maybe a teriyaki next time!

I.ve wondered whose pickin up those resident geese hit by traffic around town..

The only difference in the geese Bman used is they weren't hit by traffic. :smt005 :wink:

With goose you can skip the oven and dehydrator. Just use marinade and eat it. Goose is tough enough.
