I caught a bunch of trout yesterday and have the fillets in the fridge. Do you guys have any suggestions other than frying? I would like to try something different. Thanks!

In a large skillet put just enough olive oil to coat bottom. Season filets with whatever you prefer. Cook filets in skillet until almost done then throw in a pound of shrimp and cover until shrimp turn pink, usually about 5 minutes.

Everglades Seasoning on the fillets and saute (skillet fry) in butter. To add a cream sauce, use same pan w/ drippings and add cream, a little more butter and some capers and/or artichoke hearts. Let thicken a little and pour over cooked fish. Oh yeah, this is not a heart healthy dish but it sure is good.

I like to give them a light coating of Blackened Redfish Magic (not too much) and saute them in olive oil. Even my wife loves them this way and she is not much of a fish eater.

I use Zataran's blackening seasoning. Dry fillets, season (hand rub) with a good amount of Zatarans. Get cast iron skillet hot enough where the butter will dance when added to the hot surface. Add seasoned fillets to cast iron skillet, add more butter.... Cook both sides until the fillet begins to break apart, then add tiny amount of white cooking wine in the last few minutes of cooking the fish.
Add onions or thinly sliced potatoes after fish are removed form the pan. Best cooked out doors as it can get kind of messy/smokey.
most any blackening seasoning will do but I prefer Zatarans. :lick: :lick: :lick:

Olive oil and Lawrey's Seasoning Salt. Put them on a hot grill. As good as trout are I prefer a small spanish. Cook them hot where the edge gets a little crispy but the filet is not over cooked..... made myself hungry.

Texas Pete hot sauce & your favorite fish fry....dredge fish in Texas Pete put in breading & fry - not hot perfect seasoning - it is the only way I fry fish now.

Baked - butter, lemon juice, salt & pepper, maybe some lemon pepper - bake at 350 until done. Sometimes broil at the end to give fish some color.

BBQ - salt & pepper & your favorite BBQ sauce baked in oven....pretty good
