Flats Advice

My girlfriend's dad gave me an old 15' Procraft with a 70hp 2 stroke Force a few months ago and between school, work and some work on the boat I am finally getting to take her fishing. I've taken it out on the Suwannee a couple of times and we went out scalloping a few weeks ago. I'm looking to take my dad who is visiting this weekend out to do some flats fishing.
Were looking to target trout and reds. I've heard that a good place for reds is near the oyster beds. Are you guys mostly sight casting tailing reds or using some other technique? And for trout I've heard to go out a little bit deeper. Is that correct?
I am from the east coast and I have some experience fishing mosquito lagoon but mostly I fished in the the banana and indian river mangroves and structures. I will be launching at Rocky Creek.
