This is so simple it's almost embarrassing to post:

Buffalo Wings/Drum sticks

Ingredient's List:

Chicken - However much you want to cook, and if you want it skinless - leave the skin on until it's done cooking.
Texas Pete's Buffalo Chicken BBQ Sauce - 1 Bottle
Essence - However much you can stand
Emeril's Essence Recipe
2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Charcoal
Favorite wood to cook with, soak it at least an hour in water.

Rub chicken down with Essence and let it set for at least an hour

Let coals burn down low, My philosophy in grilling is low and slow for anything over 1" thick.

Spread the coals out in such a way as not to be directly under the food.

Put a couple pieces of soaked wood on the coals.

Put the chicken on the grates and close the lid, turn it every 15 minutes for one hour or until the juices run clear. No peeking :hammer:

Put the Texas Pete's in a bowl and dip the chicken in it let each piece sit there and soak up some of that good stuff.

Eat with Beer or your favorite cold beverage.

Well it took me a little while...but I tried GeneO's chicken recipe tonight.....Man oh man.....If you don't like it hot cut the cayenne in half....Have an old spice jar handy too...cause you will have enough to make several meals with....

It was good, but I think it is better somewhere near O tower :-D
