Mackerel and Ling Recipes

Got these from a fishin' buddy this morning:

Mac’s Mackerel
===========

Mackerel filets

Equal parts Moore’s Steak Sauce and Lemon Juice

Olive oil

Thyme

Basil

Dill (just a little)

Touch of Cayenne Pepper

Honey

Little Salt (Moore’s provides most of the salt)

Mix Moore’s and Lemon Juice. Marinate filets 15-20 minutes. Pat dry. Brush on olive oil. Sprinkle with Thyme, Basil, and Cayenne. Drizzle with honey. Cook over hot coals or in oven broiler (it doesn’t take long).

Ling (based on a recipe from The South Beach Diet Cookbook)

Cut ling steaks about ½ inch thick

4 cloves garlic

3 tbsps olive oil

paprika

fresh basil

fresh thyme

In blender or food processor, combine garlic and olive oil. Coat steaks and let sit 30 minutes. Sprinkle with paprika, basil, and thyme. Grill over hot coals

That sounds good, OD. I'm going to try the honey on the next fish I grill. I've got fresh basil growing....some lemon, honey and garlic. That would just about have to be tasty.

I used the mackerel recipe last week--it was real good. :thumbup:
