Useful accessory. Saves fuel and increases performance. Best use is for raising the engine so you can IDLE into and out of shallower water without damage to the boat or seagrasses. Increases the time you can spend inside on marginal tides.

For your boat size, the four-inch setback is a good choice. A water temp gauge can ensure the engine isn't overheating. I've run with and without one and as long as you're careful, it's not really a problem unless the engine is raised to the max height all the time.

Well, there's hydraulic drive and then there's electric drive jack plates. I think TH Marine makes the electric HydroJacker.

I've run some boats with Atlas and they seem to work OK based on brief testing. Bob's have a dependable design and proven track record. Like electric trolling motors mounted on trim tabs, I've always been leery of submerging electrical parts in salt water so I'd stick with hydraulics.

Get a low water pick up for your outboard. Don't learn the hard way like a friend of mine did with a fried engine.

I have been running a water pressure gauge for the last 15 years, found it to be very valuable.
