They are fabulous smoked if you catch enough to crank up the smoker.

Spanish mack is delicious anyway it's cooked especially if you pick out the rete region (dark strip down the middle). It's easiest to do that after cooking and before serving by lifting it out with a fork. Just my opinion, others may disagree.

Grill Mack fillets along with an old leather boot. Once Mack is done, toss the Mack and eat the boot. :o

Not a favorite of mine as you can tell but have marinated it in Italian salad dressing and grilled it, slightly better than a boot but it is pretty close on my palate. Most people say eat it fresh or don't eat it.

Don't listen to them. Spanish are delicious. Baked in the oven with lemon pepper and butter, grilled and even fried. If you don't like fresh Spanish you don't like fish that has flavor.

fresh filets get a mustard dip and then a corn meal dusting. straight into the fryer and its actually pretty good. I only eat them the same day or the next.
