I like a 5-0 wide-gap hook. They are big enough to hold big chunks of bait and usually get the shark in the jaw for easier removal. Don't forget your long-nose pliers!

Depends on the size bait I am using and whether or not I am holding the rod or have it in a rod holder. If I am holding the rod, I prefer a J hook size 7/0-9/0. Fishing from shore with the rod in a holder, I use circle hooks size 9/0 to 13/0 and use pliers and a crimping tool to open the gap a little on the hooks. Unless the shark is small enough for me to hold in one hand, I do not unhook the sharks. I trim the leader as close as I can and release the fish. It causes less stress and less damage. Lot of information on baits, hooks, and rigging can be found in the Texas Shark fishing handbook or on Eric Ozolin's extremecoast website.
