It might not be a "hands-on" course, but you may find this link helpful...
Thes boating course is authorized by the Florida Fish and Wildlife Conservation Commission

I am also boat shopping. You going to drive to Satellite Beach to get it or will they deliver it?

It's the on at http://www.scmarine.com

It's called "The Angler".

Its a J16 with a 25HP 2 stroke motor. Im thinking about getting the upgrade to a Honda 4 stroke. Personally I Think it will be better in the long term.

You may want to check at Shields, I was looking at the same boat and got a Sundance Skiff K16 with a 40HP for about the same price. The problem, if you want to run, with the 4 stroke is that you are 5hp underpower rating with the J16 and you have all that extra weight. If you go 4 stroke, max out the power @ 30hp. I would tend to want to max out power if posible and the 40 Johnson I got is very quiet and draft was a major consideration with buying a little skiff. I also liked the way the Sundance was finished a lot better. The Sundance is rated 40 HP max vs. 30hp for the J16. I do 33 with a buddy, which is all you want in that boat, 2 max. The Sundance was also already set up for bow mount trolling motor. It's worth a look.

Get a price from the Sports Center, in Perry GA, before you buy.
