Dont know if this is the correct forum, or not, We are going grouper fishing this Saturday, and the guide has been catching some amberjack. Since I am new to salt water fishing, would like to know if they are good to eat, if so, does anyone have a good recipe for them.

They are excellent grilled or smoked. I like to treat an AJ filet like a good steak. Salt, pepper, a little lemon juice, maybe some Dales seasoning and throw it on a hot grill. I am dying to get out there and get some myself if the wind ever stops.

We are planning on going this Saturday out of Panaca, Marvin says they have been catching the limit.
