Potato Encrusted Fish

Fish filets (such as trout, rock bass, talapia)
Buttermilk (low-fat)
Butter
Instant potato flakes
Salt, pepper, garlic
Soak filets in buttermilk about 5 minutes. Heat butter in skillet on medium being careful not to burn. Shake off excess milk, season filets then roll in potato flakes patting flakes on to fish so they stick good.
Cook fish in melted butter 3-4 minutes on one side add more butter and turn filets oven onto new melted butter and cook 3-4 minutes more.
