2006 BBF.net Social Key Lime Cake

You asked for it so you got it...very reluctantly.

My wife bakes cakes professionally. Her business is Enchanted Evenings, Inc. It is not a part time job or a hobby. Asking her to relinquish one of her recipes is like asking one of you to give up the #'s to a favorite fishing spot. However, since she saw what a great bunch of folks were associated with the forum she decided to do it "just this once."


Key Lime Cake

Cake

1 Lemon Cake Mix
½ cup water
½ cup key lime juice
1 (3oz) pkg. lime gelatin
½ cup vegetable oil
4 eggs, slightly beaten

Frosting

¼ lb. butter (not margarine)
1 (8oz.) cream cheese
1 tsp vanilla extract
4 cups confectioners’ sugar
2 tbs. milk


1. Preheat oven to 325 degrees.

2. Grease and flour 2-9" cake pans with non- stick cooking spray

3. In a large mixing bowl, add the cake mix, water, lime juice, gelatin, vegetable oil and eggs.

4. Beat ingredients together until well mixed, about 3 minutes

5. Pour into prepared pans and bake in preheated oven for 30 to 35 minutes.

6. For the frosting, combine the butter, cream cheese and vanilla in mixer.

7. Add confectioners’ sugar and little at a time and mix until smooth and creamy.

8. Add milk to reach the desired spreading consistency.

9. Spread frosting between layers and around top and sides.

Thank you, thank you, thank you Mrs Short Strike! We'll be patronizing Enchanted Evenings for future special events based on the taste test we got at the social. Ya done made Mama happy and that makes ol' dad happy :thumbup:

Careful with ya spellin there, SR.
:o I checked it .... Webster says it's correct and refer's to a record of occurrences or events... I was trying to be nice... sometimes it's tough.
