smoked mullet

What is a good marinade for smoking mullet?? One that's not too salty.

weaver I smoke alot of mullet. all i do is start with a fat fresh mullet,split him spray the black out of him salt him like you were salting your plate. "twice" smoke em with indirect oak heat "not too much smoke" at a temp never going over 150 deg. usally takes about 4-6 hours. basting him halfway through the cooking with a mixture of butter and paprika. good luck :)
