I've seen Abcarius and others take out tandem kayaks out solo before take the seat out like you said and you will have lots of room and remember you will most likely be in 2' of water so you can get out from time to time and get stuff that is out of reach when your sitting.
Charles Pulley takes a 2 pr. canoe out solo and push polls around in the shallow water.
