Modern torpedoes don't actually hit the ship, at least they're not supposed to. Instead they detonate under the ship causing a bubble that breaks the ship's back. In other words, when a ship is supported on both ends by the water, but not supported in the middle because of the bubble, it breaks in two. This clip shows an excellent example of that.

This is a neat little feature:

The torpedoes are designed to detonate under the keel of a surface ship, breaking the ship's back and destroying its structural integrity. Both can circle back and try again if they miss.
