It said he released it, why would you keep it? Isn't a tarpon just like a big carp? I have never heard of anyone eating one. Seems like a lot of hassle to keep it when you can get could get a reproduction mount.

I've never tried one (Tarpon) but I've eat'n many a Carp!! I would have to believe that if Tarpon are similar to Carp.... there would be a lot fewer being released! Mid west is full of "pay lakes" stocked with Carp. Spent many a pleasant day with my Grandfather fishing with his receipe dough balls for em. Even one taken from dirty water will clean themselves out if put (alive) in fresh clean water for 2 or 3 days before you clean em. Cut in steaks, score the steak with a knife about 1/4 ot 1/2 inch deep and 1/2 inch apart when fried will result in the bundle bones or fork bones (which ever name you prefer) that are mostly in the shoulders to crisp up when put to the grease!!
"Good Judgement" comes from experience, ... and a lot of that..... results from "Bad Judgement".

isn't it illegal in state waters to remove that fish from the water for pictures?
