I've heard those are hard to fillet and pretty tough and crunchy. That looks like a younger one of the species, though. I've never caught one, but I have seen them diving and they seem to be very sedentary. Prefering to camouflage themselves with marine growth.
I've also seen them over here, so they must be a widely spread species.
