Heres what cobia are supposed to look like!
Clean cobia and cut fillet into steaks. In hot cast iron skillet melt dab of butter. Add lemon pepper and crushed red pepper flakes. Sear steaks on both sides, put on hot grill. Add 1 tablespoon butter and 4 tables spoons of lemon juice. Add pinch of season all, more crushed red pepper to taste, and fresh crushed black pepper. Reduce to thin paste. In second pan, cut four strips of bacon into very small pieces, cook until crisp and drain away fat. Blot bacon pieces with towel, Add bacon pieces to reduced butter sauce. Take cobia steaks off of grill when firm. Spoon bacon sauce over cooked cobia steaks. Doesnt get any better than this!!

DANG JAY, YA GONNA EAT ALL OF THAT, SEEMS LIKE YA WOULD AT LEAST INVITE A PO OLE GRADY COUNTY BOY TO COME HELP YA. MAN THAT LOOKS SO GOOD I CAN ALMOST TASTE IT.

CT and PA, thats only 1/2 of a fillet. Still got 1 &1/2 fillets left plus I always keep the centercut(backbone) for barbequed cobia. Thats another reipe all together. I think Im gonna cook the other half of the first fillet Thursday night . Strip it and cook like kabobs. Yum YUm!!
