Hope its not to late to post, but I've gotta second the Letts taxidermy in Midway. Both Jon and Bill will do great work. Bills got a room full of mounts for you to inspect his work. Bill does mostly deer now days but Jon will mount bobcats, coyote, deer, hogs and fish.

Dolphinatic have you ever seen any of Jons fish mounts? He does a fantastic job, i've given him pieces of driftwood and he'll use them on some mounts, it adds a nice natural touch.
