I don't check my butt. I put it on the regular grill with hickory chips and get the outside cooked good, seared if you will. Then off the grill, wrap in foil and maybe pour some sauce on it. Insert in oven at 250, cook about 1hr 15 min per pound.

Then that butt is ready to strip and pull!
